How to Cook in Your Oven

So I cook a lot. But the majority of it is in my oven. Example: I made THE GREATEST sandiwch twice in the past week with stuff that was on sale at the grocery store, a chefs knife, a cookie sheet, foil, and my oven. All you need is:

a rotisserie chicken (this thing lasts me a week), on sale for 4.99

roasted garlic ciabatta, day-old and on sale for 1.80

ready-made pesto (i use buitoni, it’s 100% natural), on sale for 4.00 (it’ll last at least 2 weeks if you’re cooking for one)

frigo shredded parmesan or triangle block, on sale for 4.00 (same, lasts a while)

2 lb. box organic spinach, on sale for 4.00

natural dried cranberries (read: not craisins or any with 20938402938 grams of added sugar)…these are actually pretty hard to find in america. every time i go to iran i just bring back like 10 lbs. of it and throw them in the freezer.

Okay are you ready for the easiest lunch ever? get out your cookie sheet (this also works in a toaster oven!), throw some foil over it (this is optional…i just don’t clean my cookie sheets, haha). Cut off a hunk of the ciabatta, cut it in half through the middle so you have two sides with crust on the outside of each. I think the bread is too thick, so I slice out a bit of the middle and put it aside to use later as breadcrumbs. Spread a big spoonful of pesto on one side, and a tiny bit on the other, just so it sticks. Now, get the rotisserie chicken, slice off whichever part you like (sometimes I like  dark meat, sometimes I like breast, whatever). But whatever you do, take the skin off! Shred it up with your fingers or just cut it into random pieces with a knife. Put that over the pesto on one slice of bread. As much as you want/can fit. Sprinkle parmesan over the top of the chicken, then put dried cranberries wherever you can fit them and they won’t fall off. Put both sides on the cookie sheet.

Turn the broiler on in your oven and throw the cookie sheet in. You’ll be able to smell when the cheese is melted and that’s when you take it out. If you can’t smell it, just check it frequently to see when the cheese is browning. When it’s ready, take it out and let it sit for like a minute while you get out the spinach. Now, just add as much spinach as you please over the chicken, put the other side on top and enjoy!

This is seriously my favorite and go-to sandwich, ever.
